Abstract

Alcohol-free wine is not yet a settled category. It sits between conventional wine and a drinks world of its own, and European wineries, technologists and brands build it as they go, by framing what it is for, proving the product, and winning acceptance from drinkers and the trade. Twelve interviews, field work in Tuscany and ProWein 2026, 139 pages.
